After the dinner rush we start a second, heavier pot. Forty bowls on Friday nights, served until they run out.
A bowl for after midnight
Every Friday at eleven, the kitchen switches to a single late-night bowl: a richer, heavier broth we only make in small batches. It changes every week and it never comes back exactly the same.
There are forty bowls. Walk in, take a stool, and the counter will tell you how many are left.
